Recipes Malawi-style: Banana Bread

My favorite banana bread recipe didn’t make the cut into the second edition of the Peace Corps Malawi cookbook. So, I’m going to reprint it here. This banana bread is very moist, but doesn’t rise much and is very pale. It’s not the most attractive banana bread, but it sure is yummy.
Preheat oven to 170°C or 350°F

½ c margarine or butter
½ c sugar
2 eggs
2 t vanilla
1 c mashed bananas
¼ c yogurt or chambiko
1½ c flour
1 t baking powder
¼ t salt

Cream the butter and the sugar, then mix in wet ingredients. Mix the dry ingredients in a separate container. Add the dry ingredients to the wet ingredients and combine until just moist.

Pour into a greased and lightly floured pan. Bake for 25-30 min, or until toothpick inserted into the center comes out clean.
