Recipes Malawi-style: Lemon Squares

For the crust:

1/3 cup margarine
1 cup flour
¼ cup sugar
Dash cinnamon (optional)

For the filling:

2 Tbs flour
¼ tsp baking powder
¾ cup sugar
2 eggs
1 Tbs finely shredded lemon peel
Juice from 2 lemons
dash vanilla

In a small bowl mix flour, sugar, and cinnamon for the crust. Cut in the margarine and mix until crumbly. Press the mixture into the bottom of an ungreased 8×8 baking tin.

Bake at 180°C for 15-18 min or until golden.

In the meantime, mix the flour, sugar, and baking powder for the filling. Beat in the eggs, lemon peel, and lemon juice. Pour filling over baked layer (it should make a satisfying hissing sound when the mixture hits the crust). Bake 20 min more or till lightly browned. Wait at least 30 seconds, but try for 5-10 minutes before cutting into it.
